    Pacific Pectin Recipes

     

    STRAWBERRY JAM

    STRAWBERRIES (CRUSHED)  5 3/4 CUPS
    SUGAR  8 1/4 CUPS
    PACIFIC PECTIN MIX  1/3 CUP
    LEMON JUICE

     2 TBS. 

    PROCEDURE:

    1. PLACE FRUIT IN PAN. ADD LEMON JUICE.
    2. START HEATING AND SLOWLY ADD PECTIN MIX WHILE STIRRING. HEAT TO BOILING.
    3. SLOWLY ADD SUGAR IN TWO PARTS AND HEAT TO A ROLLING BOIL. IF FOAMING IS EXCESSIVE ADD 1/4 TSP. COOKING OIL TO CUT FOAM.
    4. BOIL WHILE STIRRING 4-5 MINUTES.
    5. STOP HEATING. LET STAND 30 SECONDS. SKIM AND POUR INTO JARS.

    SOLUBLE SOLIDS - 63-65 DEGREES BRIX
