    Pacific Pectin Recipes

     

    KIWI JAM

    PACIFIC PECTIN MIX
    1/3 CUP
    (2 OZ WEIGHT)
    KIWI FRUIT (PEELED & MASHED)
    5 1/4 CUPS
    (44 OZ WEIGHT)
    LEMON JUICE
    2 TBSP
    -
    SUGAR
    7 1/2 CUPS
    (53 OZ WEIGHT)

    PROCEDURE:

    1. PLACE PEELED & MASHED KIWI IN 6QT SAUCE PAN. ADD LEMON JUICE.
    2. START HEATING AND ADD PECTIN MIX SLOWLY WHILE STIRRING.
    3. USING HIGH HEAT, CONTINUE HEATING TO BOILING WHILE STIRRING CONSTANTLY.
    4. ADD THE PRE-MEASURED SUGAR IN TWO PARTS WHEN BOILING BEGINS. STIR AND CONTINUE HEATING.
    5. WHEN JAM COMES TO A FULL BOIL, STIR AND CONTINUE BOILING FOR 3 MINUTES
    6. REMOVE FROM HEAT. SKIM FOAM IF NEEDED AND POUR INTO JARS.
