    Pacific Pectin Recipes

     

    HUCKLEBERRY JAM

    HUCKLEBERRY  2 QTS. WHOLE FRUIT (3 1/2 CUPS PREPARED FRUIT) 
    SUGAR  6 CUPS 
    PECTIN MIX 1/3 CUP
    LEMON JUICE 1/4 CUP

    PROCEDURE:

    1. WASH AND CRUSH FRUIT. ADD 1 CUP WATER AND MIX TOGETHER. MEASURE 3 1/2 CUPS INTO 6-8 QT. PAN. ADD LEMON JUICE.

    2. START HEATING AND SLOWLY ADD PECTIN MIX WHILE STIRRING. HEAT TO BOILING.

    3. SLOWLY ADD SUGAR IN TWO PARTS AND HEAT AGAIN TO BOILING WHILE STIRRING.

    4. BOIL HARD FOR 4 MINUTES. IF FOAMING IS EXCESSIVE, ADD 1/4 TSP. COOKING OIL TO CUT FOAM.

    5. STOP HEAT. LET SET 30 SECONDS. SKIM FOAM AND POUR INTO JARS.

    6. IT'S A GOOD IDEA TO INVERT JARS FOR 1 MINUTE TO STERILIZE THE LIDS
