PROCEDURE:
-
ADD PECTIN MIX TO WATER WITH GOOD AGITATION.
- STIR WHILE HEATING TO BOILING. BOIL FOR ABOUT A MINUTE UNTIL PECTIN DISSOLVES.
- ADD PECTIN SOLUTION TO WARMED HONEY. HONEY TEMPERATURE SHOULD BE ABOUT 140-160 DEGREES FAHRENHEIT. FILL JARS.

SOLUBLE SOLIDS - 65% SUGAR
NOTE: A MILD HONEY SHOULD BE USED. HONEY SHOULD NOT BE BOILED AS THIS WILL PRODUCE A STRONG FLAVOR.
