    Pacific Pectin Recipes

     

    HONEY JELLY

    MILD HONEY 
     50 OZ. (WEIGHT)
    34 FL. OZ. 
    PACIFIC PECTIN MIX
     2 OZ. (WEIGHT)
    1/3 CUP
    WATER 
    17 OZ. (WEIGHT)
    16 FL. OZ.

    PROCEDURE:

    1. ADD PECTIN MIX TO WATER WITH GOOD AGITATION.
    2. STIR WHILE HEATING TO BOILING. BOIL FOR ABOUT A MINUTE UNTIL PECTIN DISSOLVES.
    3. ADD PECTIN SOLUTION TO WARMED HONEY. HONEY TEMPERATURE SHOULD BE ABOUT 140-160 DEGREES FAHRENHEIT. FILL JARS.

      YIELD - 64 OZ (WEIGHT) OR 46 FL. OZ.

      SOLUBLE SOLIDS - 65% SUGAR 

      NOTE: A MILD HONEY SHOULD BE USED. HONEY SHOULD NOT BE BOILED AS THIS WILL PRODUCE A STRONG FLAVOR.
