PROCEDURE:
-
WASH AND CRUSH FRUIT. HEAT TO BOILING AND POUR HOT FRUIT THROUGH FILTER CLOTH PLACED IN COLANDER. MEASURE 3 CUPS INTO 6-8QT PAN
- ADD LEMON JUICE TO ELDERBERRY JUICE. START HEATING AND SLOWLY ADD PECTIN MIX WHILE STIRRING. HEAT TO BOILING.
- SLOWLY ADD SUGAR IN TWO PARTS AND AGAIN HEAT TO BOILING. BOIL HARD FOR 2 MINUTES.
- STOP HEAT. LET STAND 30 SECONDS. SKIM AND POUR INTO JARS. INVERT JARS
