CRANBERRY JAM / SAUCE
1 - 12 oz. bag Cranberries
12 oz. water
3 1/2 cups sugar
1/4 cup Pacific Pectin Mix or Pacific Pectin Mix No Acid
Add prepared Cranberries ( finely chopped/ food processor ) and water to 4 to 6 qt. pot. Bring to medium boil for 4 minutes. Add pectin and boil for 30 seconds more stirring constantly. Continue stirring while you add the first half of the sugar. bring back to near boil and add the second half of the sugar. Once back to boil, Boil for one minute. You may pour into 2 bowls for use as a sauce. You may need to pre heat the bowls depending on material so they do not crack. Allow to cool for 15 minutes then cover with plastic wrap. once sauce is at or near room temp. place in refrigerator until used. |
